New, New: Back to School Sandwich recipe—Featured Work w/ Bee’s Wrap

Hey, hi, hello there! To says it’s been a while and this post is LONG OVER DUE is putting it mildly. But, I am back and so excited to share that we have partnered with Bee’s Wrap to highlight their eco-sustainable, accessible and affordable plastic-free option. The recipe below is an easy, fun and the perfect thing to help create a sense of routine—to embrace the “new-normal”, given the presence of the pandemic. Check it out below!

Bee’s Wrap
Recipe Sandwich

Spread Ingredients:
1/4 tsp salt
1/8 tsp pepper
2 tbsp mayo
2 tbsp grain mustard
3/4 tsp honey
1/2 tsp lemon juice

Instructions:
In a bowl, whisk together the the salt, pepper, honey, mayo, lemon juice and grain mustard. Mix until the everything is well combined. Set aside.
Sandwich Ingredients:
2 slices of bread
2-3 slices of turkey
1/2 c arugula
Desired amount red onion
3-4 slices of peach
1-2 slices of tomato
1-2 slices of white cheddar

Instructions:
In a small bowl, combine the mayo, grain mustard, honey, lemon juice, salt and pepper.

Using a pairing knife, cut the peach in half. Use you hands to counter twist the peach halves apart. Wrap the side with the pit in the Bee’s Wrap and set aside. Thinly slice the remaining side.

Next, thinly slice the desired amount of red onions. Recommended is 2-3 slices.

Coat the inside of each slice of bread with the prepared spread. Next, stack the inner ingredients of the sandwich in this order. White cheddar, tomato, peach, arugula, red onion and top with the remaining slice of bread. Cut if desired and enjoy!
Chef Note: For a more kid friendly version, remove the red onions, opt for swapping out the spread for either mayo or mustard, romaine in place of of arugula and a milder cheese like—Muenster. Also, for an additional depth of flavor, try lining a baking sheet with parchment paper and roast the peaches slices at 375° for 10-15mins. Enjoy!
